PROSECCO SUPERIORE
D.O.C.G. EXTRA BRUT MILLESIMATO
A sparkling wine with a lovely straw yellow colour enhanced by light greenish highlights and a joyful, very fine perlage. On the nose it is fragrant and fruity with notes of yellow fruit and white peach, and delicately floral with a slight nuance of acacia flower and citrus hints. In the mouth it has a good structure and confident zest which, combining with the acidic structure, renders the wine pleasantly fresh. The long finish is enlivened by subtly aromatic tones.
Variety: Glera (min. 85%) and other local white grape varieties (max. 15%).
Location: hills of Valdobbiadene – Conegliano.
Harvest: september.
Vinification: off the skins at a controlled temperature of 16°C. Slow second fermentation in springtime after the harvest in large sealed vats at 14-15°C followed by resting on the lees for around 3 months.
Bottle pressure: 5.5 atm.
Sugar residue: 4,5 g/l approx.
Alcohol: 11.5%.
Serving temperature: 5-7°C, open immediately before serving.
Pairings: ideal as an aperitif and extraordinary throughout the meal with seafood and vegetable-based first courses, most fish dishes and delicately – flavoured white meats.
